Pea Panna Cotta

Ingredients

450g Frozen Peas
3 Gelatine sheets (soaked in cold water)
450g Whipping cream
Seasoning

Method

Blanch peas (2 minutes)
Boil Cream (add soaked gelatine)
Blend altogether and season
Set in moulds

Garnish with pea shoots, parmesan, pickled mushrooms and shallots.
